AIP Creme Brulee

The thing I missed the most when I first started on the Autoimmune Protocol after my Hashimoto’s diagnosis, was a little after-dinner sweet treat, that wasn’t just a piece of fruit on its own!

I came up with this little treat a while back which is not only delicious, it also helps with gut healing, due to the gelatin ….and it is as close as possible to my previous favourite dessert, Crème Brulee, only a healthy, wholefoods, refined sugar free version. It’s sweetened with some fresh pear and a few fresh dates to give it a slight caramelised flavour.

The recipe makes up about 6 (depending on the size of your ramekins) so you can either share with family…or keep aside in the fridge for a few days for yourself (I won’t tell anyone!). It’s best not to fill more than 2/3rds so there is room for a dollop of whipped coconut cream and some fresh berries on top (yuuumm!!). Hope you enjoy.

AIP CRÈME BRULEE

Prep time: 5 mins
Cook time: 10 minutes
Serves: approximately 6 small ramekins

Ingredients

  • 1 ripe pear, peeled and diced
  • 2-3 fresh dates, cut in half with seed removed
  • 2 cups coconut milk
  • 1 teaspoon of vanilla paste or powder
  • 1 heaped tablespoon of grass-fed gelatin crystals (I like Great Lakes brand) – adjust quantity up or down depending on how firm or soft you want your brulee (if firm then it is more like panna cotta, which is also delicious)

Instructions

  1. Combine all ingredients, except gelatin in a small saucepan.
  2. Simmer gently until pears and dates are soft, about 10 minutes on low.
  3. Remove saucepan from heat and sprinkle in the tablespoon of gelatin (you can play around with this amount, depending how firm or soft you like your brulee)
  4. Give it a quick stir then use a stick blender, straight in the pan, to blend the mixture until smooth.
  5. Pour into individual small ramekins and put in the fridge to cool down and set slightly.

Serve with a big scoop of coconut yoghurt or whipped coconut cream on top and some fresh berries (strawberries, blueberries and raspberries are my favourite but even diced mango and blueberries would also be nice).  A small amount of maple syrup can be drizzled over the top…if you want it to look fancy!
